Makes 12 crepes. Ingredients : 3 eggs, 2 cup flour, 2 cups whole milk, 1/2 cup beer, 1 T melted butter, 1t. salt. In a large bowl, whisk the eggs and slowly add the flour. Keep whisking as you pour milk and beer little by little. Cover, and let the batter rest for at least one hour.
When ready to cook the crepes, add the melted butter and the salt, whisking well. To cook a crepe, heat a lightly oiled pan over medium-high heat, take a small ladleful of batter, and pour in the center of the pan. I
mmediately swirl the pan so that the batter spreads all over. Cook until the rim detaches itself from the pan, then use a wooden spatula to flip it onto the other side, cooking for an additional minute.
