ROASTED TOMATOES in a Skillet

Serves 4. Ingredients: 4 medium round tomatoes sliced in half, 2 minced garlic cloves, 4 T bread crumbs, 4T chopped parsley, 2 T olive oil, salt and pepper.  Add a little salt to the tomatoes and place them, with the seasoned part down, on a platter so water comes out and makes them sweeter.  Set aside for 15 minutes.  In a small bowl combine bread crumbs, garlic, and parsley.   In a nonstick skillet heat 1T of oil over moderate heat. Place the halved tomatoes cut side down, for 2 minutes. Flip them back, add bread crumb mixture, drizzle 1T oil.  Simmer for 10 minutes
