Umami is a Japanese term that describes a delicious
meaty or savory taste. Chemically, umami detects the presence of monosodium glutamate. Monosodium glutamate (MSG) is the sodium salt of glutamate, an amino acid found in the human body and all sorts of foods (tomatoes, parmesan cheese, mushrooms, seaweeds, miso...). MSG is a popular food additive because it enhances the flavor of foods.
