Bay Leaves

Mediterranean bay leaves are

 

 used in both their fresh and dried forms to flavor soups, stews, and  braises in Mediterranean cuisine. The fresh leaves have a milder flavor.

California Bay Leaf is similar to the Mediterranean but has a stronger flavor.

Indian Bay Leaf has a taste and fragrance similar to cinnamon bark

 West Indian Bay Leaf is mostly used to produce cologne.
