Soluble and Insoluble Fiber

Fiber is found only in plants food: fruits and vegetables.  Soluble fiber absorbs water turning into a gel-like mush (oatmeal in water), insoluble does not absorb water (celery).  An apple contains both kinds of fiber: insoluble in the skin, soluble inside.  Soluble fiber helps lower LDL, the "bad" cholesterol, and insoluble fiber adds bulk to the stool and therefore relieves constipation.
