About Saffron

Saffron consists of the stigmas-the flower parts that catch pollen-of a certain crocus native of the eastern Mediterranean. A single flower has only 3 stigmas. One ounce is made up of 13,000 stigmas.  It is the most expensive spice in the world, several hundred dollars a pound.  Saffron is often adulterated or replaced by turmeric.
