Lentils come in many sizes and colors.
Brown Lentils are the common ones found in supermarkets. Hold their shape well. Great in soups and salads
Lentilles du Puy. These French lentils are smaller than the common brown, Their color is olive green. They have a rich, hearty flavor. Perfect for salads. They are my favorite lentils.
Black Lentils. They have a robust, earthy flavor but their skin can make dishes dark and muddy.
White Lentils. They are the black lentils minus the skin. Great in soups because they disintegrate.
