Why Soaking Beans in Salty Water?

Because the skin becomes softer and less likely to break during the cooking.   Chemistry is involved in this process: sodium ions replace calcium and magnesium ions and this allows more water to penetrate the skin.

For 1 pound of dry beans use 4 quarts of water and 3 tablespoons of salt. Soak the beans for at least 8 hours.  Rinse before using.
