What is Couscous?

Couscous is made of semolina, the hard wheat flour used also to make pasta.  It is made by rubbing semolina and water between the hands to form small granules  and then dried.  The couscous sold in supermarkets is precooked and needs only a few minutes in boiling water to be ready to eat.

Pearl couscous is larger than traditional couscous and it is toasted instead of dried
