How To: Salsa Couscous Chicken!

Serves 6

 

Ingredients:

  • ½ cup almond, toasted and coarsely chopped

  • 1½ cup couscous

  • 2 cups of boiling water

  • salt to taste

  • 2 tb vegetable oil

  • 2 garlic cloves, chopped

  • 6 chicken thighs

For the sauce mix well, in a bowl, the following ingredients:

  • 1 cup Mexican salsa

  • ½ cup canned diced tomatoes

  • ¾ t cinnamon

  • 3 tb dried cranberries

  • 1 tb honey

  • 1 t cumin

  • 1 t salt

Prepare couscous adding it to the boiling water.  Let it rest.

 

  1. In a frying pan heat the oil until just smoking.

  2. Add the garlic and then the chicken. 

  3. When the chicken is nicely brown cover it with the sauce.

  4. Lower the heat, cover the pan and cook for about 20 minutes.  Check the chicken with a fork to be sure it is cooked.

  5. Serve the chicken over couscous and sprinkle almond on top.
